I'm riding Ritchey WCS Z-MaxEvolution 2.1 inches, tubeless. They are marvelous in mud, find grip in a decent layer of snow on (very) low pressures and are great all-year tires. Just too much rolling resistance for some summer XC races. For deep snow you can get a Z-Max in plus size (not tested by me), for ice you should really look into getting some spikes.
Specialized used to field absolute greatness for mud slaying! The Captain tire allowed me as a youth getting up the steepest hills in slippery mud, where others had trouble pushing the bike up. It was pure epicness, but the downside was a noticable increase in rolling resistance. Now I can find it via google search on their site, but when browsing it, the tire isn't displayed. -

None of these tires are real winter tires though. For me to keep on biking, I have bought studded soumi tires, exclusively made for winter with over 200 studs in each tire.

All these tires are useless without studs. If you ride these tires with snowy trails and patches of ice you'll end up on your ass right away. I ride in Ontario by the way real winter not fall conditions. This video is absolutely pointless

pretty much the shittiest tires you can buy...but not only the tires a trash...the procore system is a real rip off too... -
i use my current tires no winter tires needed

where was the mud ? specialized tyres all the way at around£30 can not be beaten for UK conditions
