How to determine a right chain length should be taught from scratch without a sample/old chain. Derailleur acts differently from brand to brands, the derailleur should be demonstrated where would be the maximum stretch and the minimum retract. Also should let people know that there is an adjustable screw with most reputable derailleur manufacturer able to loose or tighten the derailleur tension should the chain has some discrepancy. I think the public would be more interested to see a demonstration on that aspect!

What if I dont have the chain? I have a Mongoose Hoop D BMX bike but it has no chain, so I'm attempting to figure out what size chain to get

This isn't the way I do it -- I think it's far better to size on both small rings (front and back) -- use the longest chain that will work with that combination -- and then check that the chain will work with the largest gear on both front and rear. You should be able to shift into that combination with the rear derailleur still making some "s" shape to the chain. If you can't shift to the large-large combination with some derailleur bend then you need a larger capacity derailleur and there's no correct chain length that will work. This method gives you the longest chain possible and reduces friction and derailleur stress.

this is no use for a one shot Shimano chain, you can't just keep putting in new pins.

I,ve seen this method many Times, except there was one big difference here, all the big to big ring methods i,ve seen do not go through the derraileur only over the large ring front and back, surley this method make it far to long.
